Canadian Craft Chocolate Makers

The early craft chocolate or "bean to bar" movement makers were primarily from the United States, Dick Taylor, Raaka, Dandelion Chocolate, and Fruition Chocolate Works just to name a few.

The movement to control the full process from bean to bar and to create deliciously crafted chocolate in small batches started to slowly spread across the world. You can now find makers in almost every country. 

Bean to Bar Makers Not from the USA

Here are three non-US makers creating wonderful bean to bar chocolate.

Australia

Smooth Chocolator

The Smooth Chocolator is a small batch, bean to bar chocolate maker based in Geelong, Australia. Their mission is to bring out the natural characters of each cacao bean in the chocolate they make. When you taste their single-origin bars, you are tasting the cacao bean, they merely help enhance the flavors. All of the cacao used is ethically sourced and transparently traded. The cacao is carefully roasted, cracked, winnowed, conched and tempered. A time-consuming but rewarding process which results in a well crafted delicious chocolate.

Omnom Chocolate Reykjavík

Omnom is a small-batch, craft chocolate maker based in Reykjavík, Iceland. The chocolate maker was founded in 2013 by childhood friends Kjartan Gíslason and Óskar Þórðarson. Kjartan worked as a chef across Europe for two decades before discovering the amazing world of chocolate. Óskar worked in the fishing and start-up sector before launching Omnom. The company started as an experiment to see if the two friends can master how to make chocolate. From the start, they received positive tasting feedback. After receiving positive feedback, they set up a small chocolate-making lab inside a converted gas station and launched. Omnom's mission is to make the best chocolate possible, using the highest quality of ingredients.

Vietnam

Marou, Faiseurs de Chocolat

Marou was one of the first bean to bar makers in Asia. When Vincent Mourou left his advertising career in San Francisco, he moved to Vietnam to find himself. This is when Vincent met Samuel Maruta a banker from France living in Saigon with his wife and two kids. One day during a camping trip the two googled "cacao plantation" and headed towards a farm in Ba Ria Province with no address. On the way back to Saigon, the two decided to start Marou Faiseurs de Chocolat. The two had nothing but a blender, an oven, cake tins, and Sam's kitchen. Samuel and Vincent continue to work with a tight network of small farmers who they buy the best quality beans. The cacao in Marou chocolate is roasted slow and low so you can truly taste their work and terroir of each provincial origin. Marou has become a leading brand for pure dark chocolate, entirely made from Vietnamese cacao.

Canadian Craft Chocolate 

One country which has been making a splash in the craft chocolate scene is Canada. At the 2019 International Chocolate Awards, there were nine Canadian chocolate makers winning in various categories. 

Here is the list of the nine winners, including the awards they won at the 2019 International Chocolate Awards, we added one additional Canadian craft chocolate maker we think you should try to even out the list to ten.

Avanaa, Montreal, QC

Avanaa, started after Cath a geologist visited Mexico and thought, why not make chocolate in Montreal. She soon left her job to pursue Latin America for the best cacao. She brought back the cacao she found to Montreal and started crafting chocolate bean to bar.

Avanaa

ChocoSol Traders, Toronto, ON

ChocoSol is a craft chocolate maker, which is on the mission to craft revolutionary foods that are good for mind, body, and soil. ChocoSol was founded in 2004, in Oaxacan, Mexico and has been making craft chocolate at their Toronto facility since 2006.

East Van Roasters, Vancouver, BC

East Van Roasters is a specialty cafe and social enterprise. East Van Roasters creates organic bean to bar chocolate and roasts coffee, which is prepared at their cafe in Vancouver.

East Van Roasters

Hummingbird Chocolate, Almonte, ON

Erica and Drew, founders of Hummingbird Chocolate spent their careers working with farmers in developing countries and gained huge respect and affection for people who make food, from grower to artisan. After returning to Canada, they started to make chocolate as a hobby, the hobby soon gained traction from the community and the two turned the hobby into an award-winning chocolate shop.

Jacek Chocolate Couture, Edmonton, AB

When Jacqueline Jacek couldn’t decide whether to become a fashion designer or a chocolatier, she combined the two to create her dream job. Jacqueline runs Jaceks like a clothing line, launching seasonal collections that are a treat to the eyes and the taste buds.

JACEK Chocolate Couture

Kin + Pod Chocolate, Calgary, AB

Kin + Pod is an Alberta company dedicated to making exceptional chocolate from bean to bar. The chocolate is made in small batches, the beans are carefully selecting using ethical cacao producers. Each bar is tasted for quality, a tiny company trying to to do good by making delicious craft chocolate.

Palette De Bine, is a small batch producer from Mount Tremblant. Quality is essential to them, priding themselves in personally selecting the best independent producers from around the world. All of their chocolate is roasted, winnowed, ground, couched, aged, tempered, molded and hand wrapped at their workshop in Mont-Tremblant.

Taylor Kennedy, the founder of Sirene Chocolate, has been a globetrotter for most of his life with a life long obsession of wanting to know how things worked and why. Through his work with the National Geographic Society, he worked for more than 18 years in remote countries with rich agricultural heritage where he began to make the connection between food and the growing demand for ethically sourced products. With Sirene Chocolate, Taylor is able to oversee production from the cacao bean to the bars on the shelves and feel good about each of the steps along the way.

In 2003 David Castellan and Cynthia Leung had the idea of creating a small, funky chocolate factory, with the idea came SoMa. Fast forward to today, they have grown to two stores, a small chocolate factory, a network of wholesalers, and a small team of wonderfully kooky and talented people. The love and curiosity of chocolate motivate SoMa to continue making exceptional chocolate.

Founded by Michèle Bowman a long-time passionate baker, Michèle makes both bean to bar, single-origin chocolate, and handcrafted bonbons. Sweetness is also from my home town, so the chocolate is a little bit special to me :) .
