Taita Chocolates starts in Puerto Lopez, a small agricultural town where the cacao used in their chocolate is grown. Taita grows its own cacao on a 23-hectare cacao plantation and is the true definition of tree to bar. Their entire farming practices are organic, they use their own compost, natural herbicides and use efficient microorganisms. To maximize the flavors and aromas of the cacao, the cacao pods are selected manually and are sorted by size, in order to guarantee a homogeneous fermentation as well as uniform roasting.
