Umeshu or Japanese plum wine is made by steeping unripe green Japanese plums in liquor. The brew is sweet and tart and often enjoyed as an aperitif or with soda. For this chocolate, an umeshu made with sake brewed by Shiga-based Ota Shuzo is infused into barrel-fermented Malaysian cacao from the Semai Community. Made into a 72% dark chocolate, the flavour is complex, with notes of sweet and tart ume and hints of plum kernel. Allow the chocolate to melt slowly on the tongue to reveal layers of flavours.

Note: Although the chocolate contains no alcohol, it underwent an alcohol infusion process.

This is a limited-edition chocolate bar, available only for a short time. It is currently available on pre-order, with deliveries beginning in October.
