Manoa Rum Bar 75% (Limited Edition)
Showcasing a locally made spirit, Manoa soaks cacao nibs in Kohana rum to create a boozy chocolate experience unique to Hawaiian sugarcane. Kohana rum is some of the world's finest pure cane rums. Heirloom sugarcanes are harvested, hand-pressed, and distilled in small batches to make every single variety bottle.

Ranger Espresso 74% Large
Ranger's Espresso Chocolate Bar strikes a balance between two of our most beloved items on the planet, chocolate, and espresso. They collaborated with some of the best coffee roasters in Portland to produce a warm and welcoming bar. They work with Trailhead Coffee Roasters to pair their Classic Espresso Blend with a 50/50 blend of their cacao from the Tumaco region in Colombia and a new bean they've been working with from forest edge communities surrounding the Gola Rainforest National Park in Sierra Leone.

Dick Taylor Straight Bourbon Whiskey 70%
For the third release in their Barrel-Aged Chocolate line, they turned to friends from artisan craft distillery; Sonoma Brothers Distilling. Using heavy-char new American oak barrels from their three years aged 'Straight Bourbon Whiskey', they fill and age the highest quality certified heirloom cacao from Belize for six months. The dry-aging process allows the cocoa nibs to absorb the aroma and flavor of the barrel and the spirit. Once fully aged, they use these delicious nibs to handcraft a 70% dark chocolate bar by adding only cocoa butter and cane sugar. The finished chocolate bar is sweet with complex & pronounced oak and bourbon flavors.

Dick Taylor Black Fig Chocolate 72%
Starting with their fruity 72% Malagasy origin chocolate, Dick Taylor adds in chewy bits of dark, rich California black mission figs. The combination makes for unforgettably bright chocolate, rife with notes of dried fruit and deep cacao, and textured with locally-sourced figs.

Ritual Bourbon Barrel Aged 75%
A blend of cacao nibs aged in bourbon whiskey barrels for several months is transformed into this dark chocolate with hints of honey and whiskey. From their home of Park City, Utah, Ritual uses Bourbon Whiskey Barrels from High West Distillery to age the cacao nibs used for this bar.

Cuna De Piedra Soconusco Chiapas With Mezcal Joven 73% Mini
Young Mezcal is made from 100% Maguey Espadín from Santiago Matatlán, a town located in the central valleys of Oaxaca, considered to be the “world capital of mezcal”. The agaves were crushed into an Egyptian stone mill, known as tahona, the liquid was fermented in oak vats and double distilled in clay pot stills to obtain the freshest citrus and herbal notes, which blend harmoniously with Cuna de Piedra's Soconusco, Chiapas 73%.

Ritual Apres Chocolate, Champagne with Raspberries 70%
Whenever there is something to celebrate, Ritual loves to do it with a bottle of bubbly, chocolate, and berries. So they created a chocolate bar that contained them all. They soaked Madagascar cocoa nibs in sparkling white wine in a wine barrel, then grinding those nibs into chocolate and topped it off with dried raspberries.

Manoa Mai'a Banana & Nibs 70%
This inclusion bar is a new creation by Manoa. This bar features vibrant artwork by local artist Shar Tuiasoa of Punky Aloha and delicate molding inspired by Polynesian tattoo patterns. Together with historical tidbits about each inclusion ingredient, the complete package of flavor, art, and culture create three bars that do more than taste good: this is chocolate with a sense of place. A fruit brought by Polynesian settlers on their long voyage to Hawaii, banana is known as one of the canoe plants - crops essential for island living. Mai'a (banana), was used as sustenance, offerings to ali'i (ruling chiefs), and as medicine.
